Synopsis

In France, the patiserie is an idiosyncratic issue. Excellence is not something the French elite patisiers aspire to, but something they need. That necessity has a curious honorary title: France’s Best Workman, the exclusive status you get after overcoming three days of intensive baking and some precise, delicate, and fast molding. The Pennebaker-Hegedus team takes us back to the kitchen of that small universe and observes with a tender complicity as the long-suffering candidates go in their culinary rally, following the sweet rhythm of Django Reinhardt. There’s something moving about watching these mature guys building sugar sculptures like they were children, spellbound with their own creation while they’re being analyzed with the rigor of a concentration camp. The film’s deceitful simplicity proofs two things: that France’s moral omnipotence extends even to its cakes, and that behind the most powerful pleasures made for the pallet there’s a story of anguishes that leaves no trace in the chocolate.
